Learn how to make carrot cake from scratch from this step-by-step easy recipe. Carrot cake has to be one of my favorite cakes to make and it always ends up being a crowd favorite. This recipe is easy to follow and can be made from the ingredients sitting at your house. This recipe creates an extremely moist, and fluffy cake which has the perfect spices and sweetness. And to top off this delicious piece, I included a whipped cream cheese recipe which goes perfectly with this cake. A link to the youtube video of this recipe will also be listed below.
How to make:
In a bowl, mix together the dry ingredients and set it aside. The dry ingredients include the flour, baking powder, baking soda, salt, cinnamon powder, nutmeg powder, ginger powder, and clove powder.
In a separate bowl, whip together the eggs, brown sugar and white sugar.
After its well blended, add in the oil and vanilla extract.
Slowly start adding in the dry mixture in batches. Pour some dry mixture, mix, then pour some more and mix. Do not pour it all at once otherwise it will get clumps inside. At this point don't over mix the batter. Instead of whipping it, use a spatula to fold in the batter.
Add in the grated carrots. It's best to have finely grated carrots because they will be easily incorporated. Carrots that have been grated roughly will be to thick to mix in and the taste in the end will not be as pleasant.
After mixing and folding the batter, pour it into a greased pan. You can grease the pan with oil or butter. If desired, put a piece of parchment paper in the bottom of the pan. Coat the oil with some flour to further prevent the cake from sticking to the pan.
Place this cake into the oven at 350 F for around 45 minutes. The time may vary depending on the size of your pan. I used a 9 inch pan so it took me 45 minutes.
To make the whipped cream, start off putting your bowl, whisker, and ingredients in the fridge for around 30 minutes. Everything must be cold otherwise it will melt.
After its cold, take everything out.
Whisk the cream cheese until it is smooth. This should take around 3-5 minutes.
Add in the sugar in steps. Cream the cream cheese and sugar for at least 5 minutes to dissolve all the sugar.
Now add in the heavy whipping cream and whip it for 5 minutes. You'll know its ready because the cream will create a stiff peak when you pull the whisk up. DO NOT over-whip the cream. It will become runny and not stable. Once a peak is created your frosting is done.
Decorate your cake with the frosting as desired.
Extra Information:
If you don't have powdered sugar, you can blend 1 cup of regular, granulated sugar with 1 TBSP of corn starch.
Make sure your carrots are grated finely otherwise big chunks of carrots will leave an inconsistent flavor within your cake.
If your frosting gets runny while frosting your cake, put it in the fridge for 20 minutes.
